Japanese Purple Yam Pastry
Ingredients
1 Japanese Purple Yam 🍠
3 tbsp @hungarybeeshoney
1/2 cup of Coconut Milk (Thick cream) 🥥
2 tbsp of Vegan butter 🧈
Puff Pastry Sheets (of your choice)
1 tbsp of Vanilla Extract
Instructions
1. Peel Japanese purple yams and cut them into coin size circles.
2. In a pot, boil the yams on medium-high heat for 30 minutes or until the yams are soft. Check by using a fork and poking at the yams.
3. Preheat your oven to 400 degrees.
4. Strain the Japanese purple yam and let it cool down for 15 mins.
5. In a mixing bowl add your purple yams and give them a good mash.
6. Add your 2 tbsp Vegan butter or butter of choice and give it a good mash till the butter disappears.
7. Mix 1/2 cup of coconut milk into your mixing bowl and continue to mash.
8. You should see that now the purple yams have gone from a dark purple into a light pastel lavender color. The texture also has changed into a smooth consistency.
9. Now add the rest of your ingredients into the mixing bowl. 3 tbsp of Hungary Bees Wild Acacia Honey and 1 tbsp of Vanilla extract.
10. Mash and mix for 60 seconds into consistency is buttery smooth.
11. Fill into your puff pastry and bake for 17 minutes.
Tip: Used an egg wash 10 minutes into baking and brush onto your pastry for beautiful golden flakes in each bite.
